Our first recipe is for a single and delicious dessert that can be prepared without baking – fine cheesecake with fresh raspberries and white chocolate. For this sweet temptation you need the following:

  • 150g raspberries
  • 120g white chocolate chips
  • 250g cream cheese
  • 30g butter biscuits
  • 2 tbsp sugar
  • 2 tablespoons butter, melted
  • 1 tbsp lemon juice
  • 25g powdered sugar

Bring the washed and washed raspberries to a boil over medium heat with 2 tablespoons sugar and 1 tablespoon lemon juice. Stir constantly, and after 5 minutes remove the fruit puree from the heat and let it cool aside. For the bottom of your mini tart, crumble the biscuits and mix them with the melted butter and half of the chocolate. Pour the mixture into a mini-cake baking tray, press firmly with your fingers, and when done, place the mold in the refrigerator. But if you do not have a mini-size baking pan, use starter rings wrapped in aluminum foil. In the meantime, pass the raspberries through a sieve and mix well with the cream cheese. After 2 hours, remove the cake base from the refrigerator and spread the fruit-cheese mixture evenly.
