Make small tarts yourself: Recipe for mini cheesecake with raspberries

Our first recipe is for a single and delicious dessert that can be prepared without baking – fine cheesecake with fresh raspberries and white chocolate. For this sweet temptation you need the following:

  • 150g raspberries
  • 120g white chocolate chips
  • 250g cream cheese
  • 30g butter biscuits
  • 2 tbsp sugar
  • 2 tablespoons butter, melted
  • 1 tbsp lemon juice
  • 25g powdered sugar

Bring the washed and washed raspberries to a boil over medium heat with 2 tablespoons sugar and 1 tablespoon lemon juice. Stir constantly, and after 5 minutes remove the fruit puree from the heat and let it cool aside. For the bottom of your mini tart, crumble the biscuits and mix them with the melted butter and half of the chocolate. Pour the mixture into a mini-cake baking tray, press firmly with your fingers, and when done, place the mold in the refrigerator. But if you do not have a mini-size baking pan, use starter rings wrapped in aluminum foil. In the meantime, pass the raspberries through a sieve and mix well with the cream cheese. After 2 hours, remove the cake base from the refrigerator and spread the fruit-cheese mixture evenly. Put it cold for another 2 hours and serve, sprinkled with chocolate chips and garnished with whole raspberries.

Bake small tarts: Mini-Gugelhupf

The mini version of the popular cake is suitable for both an official occasion and afternoon coffee. You need:

  • 170g natural yoghurt
  • 2 eggs
  • 180g of flour
  • 100g sugar
  • 1 pack of vanilla sugar
  • 60g butter, melted
  • 2 teaspoons of baking soda
  • 1 teaspoon lemon zest, finely grated

Mix the butter and eggs with the sugar, yoghurt and lemon zest using the hand mixer. Add the mixed flour and baking powder and stir until you get a smooth dough. Fill this into little gugelhupf molds (from these products you get 12 small cakes). Bake in the pre-heated oven at 180 degrees for 12-15 minutes. You can decorate the cooled miniature ball with a glaze of 120g icing sugar, 3 tablespoons water and 2 tsp raspberry juice.

Small pies: cheesecake with berries without gluten

For this gluten-free and especially tasty recipe you will need the following ingredients:

For the cake bottom:

  • 180g dates, soaked in warm water
  • 130g almonds
  • 1 teaspoon cinnamon
  • 1 pinch of salt

For the cream filling

  • 2 tablespoons coconut oil, melted
  • the marrow of a vanilla pod
  • 80ml almond or oat milk
  • 200g cashews, soaked in warm water (best over night)
  • 1 tsp vanilla extract
  • 80ml maple syrup
  • 2 tablespoons of lemon juice
  • 300g cream cheese
  • fresh berries of your choice for garnish

Put the ingredients for the cake bottom in the food processor and process everything to a homogeneous mass (if necessary, add some water). Place a 6-cup muffin dish with paper cups and distribute the “dough” evenly. Mix the ingredients for the crème filling with the mixer and distribute the viscous mixture in the paper cups. Then place the small tarts in the freezer for at least 3 hours. Take these out of the fridge only 30 minutes before serving and garnish with fresh berries of your choice.

Bake mini chocolate cake yourself

Do you like to eat chocolate cake? Then you can prepare them in mini format! This is actually quite easy: bake cake base on your favorite recipe on a baking sheet – this could either be light or brown (if you want to add some cocoa powder or chocolate to the dough). Use a cookie cutter to cut out the individual mini cake trays in the desired shape and size. For example, you could surprise your lover for Valentine’s Day with a lovely heart shaped cake. The small chocolate cake can be designed in two or three stools – according to your personal preferences. Here we give you an idea for chocolate frosting, with which you can decorate the kitchen:

  • 85g chocolate chips, chilled and melted
  • 120g soft butter
  • 85g powdered sugar
  • 1 tb of ovaltine
  • 1 tsp vanilla extract
  • 1 pinch of salt

The ingredients should simply be mixed together in the kitchen mixer until you get a smooth mixture.
