For our falafel recipe (for 4 people) you need the following ingredients: 250g of dried chickpeas, ½ onion, four cloves of garlic, ½ bunch of parsley, 8 tablespoons of flour, 1-2 lemons (for the juice), ½ tablespoon of coriander, 1 tablespoon of cumin , Breadcrumbs, salt, a little oil and 1 teaspoon of baking powder. The chickpeas must be soaked in water for 24 hours before cooking. This water is then poured off and the chickpeas are boiled in fresh water for about an hour. The next step is to grind the cooked chickpeas – use the finest slice of a meat grinder. Then chop the garlic, onion and parsley very small and add the lemon juice, baking powder, bread crumbs and also the crushed chickpeas. Sprinkle this mixture generously and knead well together.
